There is no more impressive surrounding, however, than the 8,000-acre Skibo estate itself and the Club has devised a variety of different dining options so that no matter the season, members can enjoy an alfresco experience. Outdoor dining is not new to the Club. Picnics have long been popular, from an informal soup and sandwich 35 combination enjoyed on a hike across the heather-filled Overskibo moor to something a little more elevated. Champagne and smoked salmon by one of the estates lochs as the sun filters through the trees is the perfect way to spend a lazy summer afternoon at Skibo, notes Food and Beverage Manager Diane Munro.At the Clubhouse, the floor-to-ceiling windows bring the outside indoors whatever the time of year, and in the warmer months the dining area extends to the outdoor terrace. There, members can devour delectable dishes, from seasonal summer salads and hearty pizzas fired in the Marana Forni pizza oven at lunch, to exquisite fresh pasta, Scottish seafood and Highland game at dinner. After dessert, they can watch the sun set over the Carnegie Links with a cocktail or a Skibo signature single malt. To complement these longstanding alfresco options, in the summer of 2023 the Club introduced the Potting Shed, a pop-up at the eastern end of the historic walled garden just a few minutes walk from the castle. The old corner turret which, according to Rowland, was once used to store rusty garden forks, has been transformed.Surrounded by rows of espalier fruit trees and fragrant blooms, guests can take a seat in an enclave of the garden to enjoy a delicate afternoon tea in the most Finger sandwiches, freshrustic of surroundings.
