Our Food & Beverage Roles

Restaurant Supervisors
Our Restaurant Supervisors ensure the smooth running of service to our members and guests throughout each shift. Leading by example and ensuring standards are kept high, you'll develop the team through training, look after stock requisitions, oversee deliveries, ensure professional menu presentation and communicate with other departments to ensure members and guests receive the best service possible. Ideally, you'll have experience in food and wine pairing, too.

Senior Waiting Staff
From preparing dining rooms for service to guiding guests in selecting a suitable wine to accompany their meal, supporting waiting team colleagues during mealtimes to training new team members, as one of our 'Rank 3 Butlers' you'll be a key leader within our F&B team.

Waiting Staff
Our waiting staff are central to delivering the Skibo experience to our guests. From service of breakfast, lunch, afternoon tea and dinner to providing coffees, pouring Champagne and setting up picnics, you'll develop your communication and interpersonal skills and learn about food, wines and whiskies along the way.

Stewards
As a vital support to our front of house team, our Stewards ensure that the setup of guest dining areas runs smoothly, every work area is immaculate, tableware gleams, and stock levels are always replenished. Your efforts will help deliver the seamless, professional service that has made Skibo world renowned.

Bar Team / Mixologists
With a bespoke Skibo malt and award-winning Glasshouse gin distilled using botanicals from the estate, your bar and mixology skills will be put to good use in our stunning Clubhouse bar, which is uniquely situated overlooking the Dornoch Firth. From old favourites to creating modern Skibo classics, you'll be at the centre of our buzzing lunch service and relaxed brasserie-style evenings.

Baristas
Coffee creation is an art, with new and innovative recipes, mixes, and flavours being developed all the time. We therefore seek skilled baristas to complement our bar service by delivering top-quality coffees, teas, and hot drinks to our members and guests. Even if you have minimal experience, a passion for coffee, being part of a team and taking pride in your work are the essential skills required for this role.

Gratuities

Gratuities (tips) that are passed directly to staff are paid to all employees on a pro-rata basis regardless of their role.
